Scandalous Mint Choc Chip Smoothie

 

This is my latest concoction, and it’s fair to say I’m obsessed. On a smoothie kind of a day, it doesn’t get any better than this. It tastes like melted mint-choc chip ice-cream – ohhh, creamy badness – but it has a scandalous secret…

….it is ridiculously good for you.

I’m not kidding. We’re talking 2 portions of dark leafy greens, Omega 3s, protein, fibre, antioxidants…. it takes under 2 minutes to make, is portable and keeps you full for ages. The peppermint is good for your digestion. It is utterly delicious. It should really be wearing a cape and its underpants over its tights.

So get these ingredients in, and prepare to wow yourself for breakfast tomorrow, if you can wait that long!

Note: you can make this and save it for later – just put it in a shaker cup and you’ve got a super-healthy brekkie whenever you’re ready for it.

 Makes 1 large or 2 regular. You’ll need:

– 2 tbsp plain protein powder (you can get simple, no-additive ones made from soya, egg-whites or even peas at health food stores or online)

– 1 tbsp flaxseeds

– 1 tbsp sunflower seeds

– 1 tbsp cacao nibs

– 1 tbsp raw cacao

– ½ an avocado

– 1 generous handful of kale

– 1 handful frozen spinach

– 200ml milk of your choice

– 100ml coconut milk

– 100ml water

– ½ teaspoon peppermint essence

And a jug blender

Then:

Whizz the seeds. Then add the spinach and whizz again. Then add everything else and whizz for about 30 seconds. If it’s a bit thick for your liking, add more water. If you like it a bit sweeter, add a few prunes or dates.

Slurp. Feel like a secret superhero.
