Healthy Burns’ Night Cranachan

Ohhhh, Cranachan. Raspberries, oats, honey…. and shortbread, whipped cream and whisky. So good and yet so bad….. So here’s a very simple but more virtuous version if you’re on the home straight of that January health kick!

You’ll need… (1 serving)

A generous handful of raspberries (frozen is fine)

Greek yoghurt (fat-free works too, it just needs to be the real thing so it’s thick)

Oats

Pumpkin and/or sunflower seeds

Honey

Flaxseed oil and Maca powder (if you have it and you’re feeling VERY virtuous)

Shortbread (if you’ve some left over from Christmas and you’re not feeling THAT virtuous!)

Then you….

Toast the oats and seeds for a few minutes in a non-stick pan. Keep them moving, they burn easily.

Put the raspberries into a large glass (you can use a bowl of course, but a goblet looks so pretty!)

If you’re going the maca and flax route, then in a separate bowl mix a serving of yoghurt with about a teaspoon of flaxseed oil, and a heaped teaspoon of maca.

Dollop the yoghurt mix/just the yoghurt over the berries, then top with a tablespoon of toasted oats and seeds

Drizzle honey over the top

If you’re going the shortbread route, crumble shortbread over the top as well and decorate with a few extra raspberries.
